Macronutrients

Tremoços are exceptionally nutrient‑dense. Dried lupin seeds contain about 30–40 % protein and roughly 30–37 g of dietary fibre per 100 g. This means that nearly half of the bean’s dry weight is protein, making it one of the richest plant‑based protein sources available. Lupin flour maintains a similar profile with about 40 % protein and 37 g fibre per 100 g. Even more concentrated, lupin protein isolates made by alkaline extraction can contain more than 70 % protein.

Most of the carbohydrates in tremoços are non‑digestible fibre, leaving virtually zero net carbs. The beans are low in fat and contain primarily unsaturated fatty acids.

Vitamins, Minerals & Phytochemicals

In addition to protein and fibre, tremoços provide significant amounts of B‑group vitamins, particularly folate and thiamine, as well as minerals like calcium, iron, magnesium, phosphorus, potassium and manganese. They also contain antioxidants and phytochemicals such as polyphenols and carotenoids that may offer additional health benefits.

Caution: Tremoços are related to peanuts and soybeans. Individuals with legume allergies should exercise caution. Raw lupin seeds contain bitter alkaloids and must be properly soaked and cooked before consuming.
